Description
This classic American apple pie features a buttery, flaky lattice crust and a perfectly spiced apple filling. It’s easy enough for beginners and sure to become a family favorite for holidays or any occasion.

- 2 1/2 cups (315g) all-purpose flour
- 1 cup (226g) unsalted butter, cold and cut into small cubes
- 1 tsp salt
- 1 tbsp sugar
- 6β8 tbsp (90β120ml) ice water
- 6β7 medium apples (about 2 1/2 lbs), peeled, cored, and thinly sliced (mix of Granny Smith and Honeycrisp recommended)
- 3/4 cup (150g) granulated sugar
- 1/4 cup (30g) light brown sugar
- 2 tbsp (16g) all-purpose flour
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg (optional)
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 egg, beaten with 1 tbsp milk (for egg wash)
- 1β2 tbsp coarse sugar (for topping)
- 1 tbsp butter (optional, for dotting filling)
Instructions
- In a large bowl, whisk together 2 1/2 cups flour, 1 tsp salt, and 1 tbsp sugar. Add 1 cup cold, cubed butter. Use a pastry blender or fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
- Drizzle in 6 tbsp ice water, mixing gently with a fork. Add more water, 1 tbsp at a time, until the dough holds together when pinched. Divide dough in half, shape into two discs, wrap in plastic, and chill for at least 1 hour.
- While the dough chills, peel, core, and thinly slice 6β7 apples. Toss apples in a large bowl with granulated sugar, brown sugar, flour, lemon juice, cinnamon, nutmeg, salt, and vanilla. Let sit 10β15 minutes.
- On a lightly floured surface, roll one dough disc into a 12-inch circle. Fit it into a 9-inch pie dish, letting the edges hang over. Trim excess to about 1 inch beyond the rim.
- Pour the apple mixture into the crust, mounding slightly in the center. Dot with 1 tbsp butter if desired.
- Roll the second dough disc into another 12-inch circle. Slice into 1/2β3/4 inch strips. Lay half the strips horizontally across the pie, then weave the remaining strips over and under to create a lattice. Trim and fold the edges under, then crimp.
- Brush the lattice and edges with beaten egg and 1 tbsp milk. Sprinkle with coarse sugar.
- Place pie on a baking sheet. Bake at 425Β°F for 20 minutes, then reduce oven to 375Β°F and bake 40β50 minutes more, until the crust is golden and the filling is bubbling.
- Let the pie cool at least 2 hours before slicing to allow the juices to set.
Notes
For best results, use a mix of tart and sweet apples. Keep all crust ingredients cold for a flaky texture. If the crust browns too quickly, tent with foil. Let the pie cool completely before slicing for clean pieces. The pie can be made ahead and freezes well.
